Chilli Chicken Recipe

Chilli Chicken

Cooking Time: 45 minutes (With marination)                                                             Serves: 4-6




INGREDIENTS:
  1. Boneless Chicken (300 grams)
  2. Onion cut into cubes (2 medium)
  3. Capsicum (Green bell pepper) cut into cubes (1 large)
  4. Chopped spring onion
  5. Finely chopped ginger (1 tablespoon)
  6. Finely chopped garlic (1 tablespoon)
  7. Finely chopped green chillies (1 tablespoon)
  8. Cornflour (1 cup)
  9. Egg (1) 
  10. Tomato ketchup (2 tablespoons)
  11. Vinegar (2 tablespoons)
  12. Soya sauce (3 tablespoons)
  13. Salt
  14. Black pepper
  15. Oil


METHOD:
  1. Chicken Marination: In a bowl take the boneless chicken pieces. Add salt according to taste and a pinch of black pepper powder. Add 1 tablespoon of vinegar, 1 tablespoon of soya sauce. Break an egg to this. Add 3-4 tablespoons of cornflour and mix everything thoroughly. Marinate this for 30 minutes - 1 hour. 
  2. In a pan add refined oil for deep frying the chicken pieces. When the oil is hot add the marinated chicken pieces one by one and fry until golden brown on all the sides. Take out on a tissue paper to soak the excess oil.
  3. In a bowl add 2 tablespoons of tomato ketchup, 1 tablespoon of vinegar, 2 tablespoons of soya sauce and 4-6 tablespoons of water. Mix well and keep it aside.
  4. For making the gravy, take 2-3 tablespoon of oil in a pan. To the hot oil add in 1 tablespoon each of finely chopped garlic and ginger. Fry for a minute.
  5. Then add diced onion and diced capsicum and fry for 2-3 minutes.
  6. Add in salt, pepper and chopped green chillies. Fry.
  7. To this add the sauce mixture made previously and water as required to make gravy. Let it come to boil.
  8. To the gravy add the fried chicken pieces and cook for 2 minutes.
  9. Take 2 tablespoons of cornflour in 4 tablespoons of water and mix to make a slurry. Add this in the pan to thicken the gravy.
  10. Finally add in chopped spring onion and switch off the flame.
  11. Garnish with some chopped spring onion and serve with Fried Rice or Noodles. Bon Appetite!

NOTES:
  1. It's important to marinate the chicken for some time which will make it tender and juicy.
  2. You can make chilli chicken with boneless chicken or normal chicken with bones.
  3. If you want an additional thick coating on the chicken dip in cornflour or plain flour before frying. 
  4. While adding salt keep in mind that soya sauce contains quite an amount of salt. 
  5. Cut onion and bell peppers in the shape of cube or squares. 
  6. You can make the gravy as thin or as dry as you want. If you want more gravy add more water and little cornflour mix. And if you want it dry add less water and more of the cornflour mixed in water.
  7. While making the gravy cook on high flame all the time. That's a must for almost all Indo-Chinese foods.
