CHOCOLATE CUPCAKE
Cooking time: 15 minutes (prep) + 15 minutes (Baking) Serves: 8-10
INGREDIENTS:
- Flour (1 cup)
- Powdered sugar (1 cup)
- Cocoa powder (1/2 cup)
- Flavorless Oil (1/2 cup)
- Buttermilk (1 cup) {Replacement: 2 eggs in place of buttermilk}
- Chocolate Chips
- Vanilla essence (1 teaspoon)
- Baking powder (1 tablespoon)
- Baking soda (1 teaspoon)
- Salt (1/4 teaspoon)
METHOD:
- In a mixing bowl, sift in 1 cup of all purpose flour, 1 cup of powdered sugar, half a cup of unsweetened cocoa powder, 1 tbsp of baking powder, 1 tsp of baking soda and 1/4 tsp of salt.
- In the sifted dry ingredients add the wet ingredients one by one, i.e, half a cup of any flavorless oil (Vegetable oil, canola oil etc), 1 cup of Buttermilk (or 2 Eggs - I add both) and 1 tsp of Vanilla essence.
- Mix the wet and the dry ingredients with an electric hand blender or a balloon whisk or simply in food processor until well mixed and free of lumps.
- In this cupcake mix add chocolate chips and mix.
- Line muffin tray with paper liners or simply grease a muffin tray for making cupcakes.
- Fill 2/3 part of the muffin mould or paper liner with the batter.
- Preheat the oven at 180 degree Celsius and bake the cupcakes at 180 degree Celsius for 15-20 minutes until a toothpick inserted in the center comes out clean.
- Frost the cupcake or serve it as it is. Happy eating!!
NOTES:
- It is always recommended to sift in the dry ingredients (flour,coco powder etc) in the wet mix to avoid any lumps and have a smooth batter.
- Buttermilk makes any cake really soft. It is a good replacement of eggs. If you want to add eggs add 2 eggs for this recipe.
- Use any kind of flavorless oil such as refined oil, vegetable oil, canola oil etc.
- You can use a muffin mould lined with paper liners for baking the cupcake.
- Preheat oven at 180 degree Celsius and bake at 180 degree Celsius for 15-20 minutes until a toothpick inserted in the center comes out clean.
- For baking in the microwave oven, bake in the convection mode at 180 degree Celsius for 15-20 minutes.
- You can also bake on the gas or induction in a pressure cooker. Place some salt on the bottom and add the muffin mould. Cover with the lid and cook on medium flame for 15-20 minutes.
- To check insert a toothpick in the center and it should come out clean.
- You can decorate the cupcake with some ganache or frosting.
