Chocolate Cupcake Recipe

CHOCOLATE CUPCAKE

Cooking time: 15 minutes (prep) + 15 minutes (Baking)                                      Serves: 8-10



INGREDIENTS:
  1. Flour (1 cup)
  2. Powdered sugar (1 cup)
  3. Cocoa powder  (1/2 cup)
  4. Flavorless Oil (1/2 cup)
  5. Buttermilk (1 cup) {Replacement: 2 eggs in place of buttermilk} 
  6. Chocolate Chips
  7. Vanilla essence (1 teaspoon) 
  8. Baking powder (1 tablespoon) 
  9. Baking soda (1 teaspoon)
  10. Salt (1/4 teaspoon)


METHOD:
  1. In a mixing bowl, sift in 1 cup of all purpose flour, 1 cup of powdered sugar, half a cup of unsweetened cocoa powder, 1 tbsp of baking powder, 1 tsp of baking soda and 1/4 tsp of salt.
  2. In the sifted dry ingredients add the wet ingredients one by one, i.e, half a cup of any flavorless oil (Vegetable oil, canola oil etc), 1 cup of Buttermilk (or 2 Eggs - I add both) and 1 tsp of Vanilla essence. 
  3. Mix the wet and the dry ingredients with an electric hand blender or a balloon whisk or simply in food processor until well mixed and free of lumps.
  4. In this cupcake mix add chocolate chips and mix. 
  5. Line muffin tray with paper liners or simply grease a muffin tray for making cupcakes.
  6. Fill 2/3 part of the muffin mould or paper liner with the batter.
  7. Preheat the oven at 180 degree Celsius and bake the cupcakes at 180 degree Celsius for 15-20 minutes until a toothpick inserted in the center comes out clean.
  8. Frost the cupcake or serve it as it is. Happy eating!!


NOTES:
  1. It is always recommended to sift in the dry ingredients (flour,coco powder etc) in the wet mix to avoid any lumps and have a smooth batter.
  2. Buttermilk makes any cake really soft. It is a good replacement of eggs. If you want to add eggs add 2 eggs for this recipe.
  3. Use any kind of flavorless oil  such as refined oil, vegetable oil, canola oil etc.
  4. You can use a muffin mould lined with paper liners for baking the cupcake.
  5. Preheat oven at 180 degree Celsius and bake at 180 degree Celsius for 15-20 minutes until a toothpick inserted in the center comes out clean. 
  6. For baking in the microwave oven, bake in the convection mode at 180 degree Celsius for 15-20 minutes.
  7. You can also bake on the gas or induction in a pressure cooker. Place some salt on the bottom and add the muffin mould. Cover with the lid and cook on medium flame for 15-20 minutes.
  8. To check insert a toothpick in the center and it should come out clean.
  9. You can decorate the cupcake with some ganache or frosting.
