Chicken Pakora recipe

Amritsari Chicken Pakora


Cooking Time: 20 minutes                                                                         Serves: 4-6





INGREDIENTS:

1. Boneless Chicken (cut into small bite size cubes-20 pieces)

2. Gram Flour/ Besan (One cup) { alternative : corn meal }

3. Corn Flour (Quarter cup)

4. Finely chopped Onions (One cup)

5. Finely chopped Garlic (2 tablespoons)

6. Finely chopped Ginger (2 tablespoons)

7. Finely chopped Green Chilies ( as spicy as you want)

8. Finely chopped Coriander / Cilantro (2 tablespoons)

9. Lemon juice

10. Red chili powder ( 1 teaspoon)

11. Turmeric powder (1 teaspoon)

12. Caraway seeds / Ajwain (1 teaspoon)

13. Salt

14. Sugar

15. Baking soda (1 teaspoon)

16. Sweet chili sauce

17. Refined vegetable oil for frying

18. Chaat masala




METHOD:


  • Marinating the chicken


1. To the boneless chicken pieces squeeze in juice of a lemon.

2. To this add salt, red chili powder, 1 tablespoon of each of chopped garlic, ginger, green

chilies, 4 tablespoons of chopped onions and 1 teaspoon of sugar.

3. Now mix everything thoroughly with your hand.

4. Keep in the refrigerator for 30 minutes to an hour.


  • Making the batter


1. In a large mixing bowl add gram flour, corn flour, rest of the chopped onions, garlic,

ginger, green chilies, caraway seeds or ajwain, pinch of res chili powder, pinch of

turmeric powder, salt, sugar, baking soda, one tablespoon of chopped coriander leaves.

2. Then to this mixture add water and make a batter that is not too thick or too thin which

can coat the chicken pieces well.


  • Making the pakora


1. Add oil in a kadhai (pan) for frying the chicken pieces. Let it heat up.

2. Next take a piece of the marinated chicken dip it in the batter and place in the hot oil.

Make sure with every piece of chicken there is some chopped onion, garlic, ginger, green

chilies, coriander leaves.

3. Fry the chicken pieces on medium heat until each side is golden brown and the chicken is

cooked through.


  • Garnish


Garnish the pakora with some coriander leaves. Squeeze in some lemon juice and

sprinkle some chaat masala on top. Serve the pakoras with some sweet chili sauce.





NOTE:

1. Marinate the chicken pieces for minimum 30 minutes.

2. This pakora is all about flavor of chicken with bites of onion, garlic, ginger, chilies and

coriander. So make sure while dipping in the batter with every piece of chicken there is

some chopped onion, garlic, ginger, green chilies, coriander leaves which will give these

pakoras a unique flavor.

3. While serving don’t forget to squeeze in some lemon juice and sprinkle some chaat masala.
