OMELET NOODLES
COOKING TIME: 10-15 minutes SERVES: 2
INGREDIENTS:
- Instant noodles
- 2 eggs
- Chopped onions
- Chopped green bell pepper
- Sweet corn (optional)
- Chopped spring onions
- Chopped green chilies
- Chopped coriander
- Salt
- Black Pepper powder
- Mixed herbs (optional)
- Refined oil
METHOD:
- First boil the noodles making sure it’s not overcooked.
- Take a large mixing bowl. In it beat two eggs and mix it with a whisk.
- To this beaten egg add two tablespoon of chopped onions, chopped green bell peppers, one tablespoon of sweet corn, one tablespoon of chopped spring onions, chopped green chilies (as much as you prefer), salt, black pepper powder, mixed herbs. Thoroughly mix all the ingredients until well combined.
- Now add the boiled noodles to this yummy mixture and combine well.
- Take a frying pan and add two tablespoon of refined oil in it. Let it heat up.
- Add the egg mixture to this hot oil and spread it out evenly like an omelet.
- Let it cook on one side for 2-3 minutes until its golden brown.
- Carefully flip the omelet and allow it to cook on the other side for another 2-3 minutes.
- Omelet noodles is ready.
- Garnish it with some chopped coriander leaves, some spring onions and sprinkle some mixed herbs.
- Serve the omelet noodles with sweet chili sauce.
NOTE:
- This recipe will make a large omelet which can easily serve two people. However you can always make a small version of this using one egg and half the packet of instant noodles.
- Add chopped vegetables according to your preference. You are always free to mix and match. But it’s best to use seasonal veggies.
- If flipping such a big omelet is difficult make small omelets that is easier to flip.
- This recipe is ideal for breakfast, brunch and tiffin for kids.
