Thukpa recipe


THUKPA or SOUPY NOODLES




COOKING TIME:   20 minutes                                                                             SERVES: 4

INGREDIENTS:

1.       Instant noodles
2.       Boneless chicken cut into cubes
3.       Chopped cabbage
4.       Sliced onions
5.       Chopped green bell peppers or capsicum
6.       Chopped spring onion
7.       Chopped coriander
8.       Diced carrots
9.       Finely chopped ginger
10.   Finely chopped garlic
11.   Chopped green chilies
12.   Lemon wedges
13.   Soya sauce
14.   Vinegar
15.   Salt
16.   Black pepper powder
17.   Red Chili flakes
18.   Sugar
19.   Corn flour
20.   Refined oil



Method:

1.       Take a large pan and add two tablespoon of refined oil in it. Let it heat up.
2.       Add one large sliced onion and fry for a minute.
3.       To this add one teaspoon of chopped garlic and ginger. Fry again for a minute.
4.       Next add the boneless chicken cubes and cook for two minutes.
5.       Add one medium diced carrot and one medium sliced capsicum. Fry again for a minute.
6.       To this add chopped green chilies (as much as you like), two tablespoon of vinegar and two tablespoon of soya sauce. Mix everything well.
7.       Add chopped spring onions and a cup of chopped cabbage to this. Mix everything thoroughly.
8.       To this add three packets of instant noodles.
9.       Add water to this making sure everything is submerged.
10.   Cook for 4-5 minutes until the noodles is well cooked.
11.   Next add salt, little sugar, black pepper powder according to your taste.
12.   Now mix two tablespoon of corn flour in four tablespoon of water. Add this in the thukpa and cook for 1-2 minutes.
13.   The thukpa is almost ready. To make it more awesome follow the steps ahead.
GARNISH:
1.       Serve the thukpa in soup bowls.
2.       Sprinkle some red chili flakes on top.
3.       Garnish with some chopped spring onion and chopped coriander leaves.
4.       In each bowl squeeze in some lemon juice to add a tangy taste and flavor.


NOTES:

1.       Add vegetables according to your choice. Add seasonal veggies for more flavor.
2.       Don’t forget to garnish with freshly squeezed lemon juice and fresh coriander leaves which adds a fresh zing to this.
3.       This recipe is ideal for having as dinner on a cold winter evening.
4.       Make sure you serve it hot.
5.       You can always make a vegan version of this. Just omit the chicken and substitute with lots and lots of fresh vegetables, tofu and soya chunks.
