Stir Fry noodles recipe, Chicken Stir Fry Noodles

STIR-FRY NOODLES 

Cooking time : 15-20 minutes                                                             Serves : 4





INGREDIENTS:
  1. Instant Noodles 
  2. Boneless Chicken cut into cubes
  3. Eggs
  4. Sliced Onions
  5. Sliced Carrots
  6. Sliced Green Capsicum (bell peppers)
  7. Finely Chopped Garlic
  8. Chopped Cabbage
  9. Chopped Spring Onions
  10. Salt
  11. Sugar
  12. Black Pepper Powder
  13. Soya Sauce
  14. Chili Sauce
  15. Vinegar
  16. Refined Oil



METHOD: 

  1. Marinate the boneless chicken pieces in vinegar and salt for 15 minutes. 
  2. Boil the instant noodles (approx 3-4 packets) making sure its not overcooked. 
  3. In a pan, heat 1 tablespoon of oil. To this add the 2 eggs, salt and pepper and fry for 1 minute and scramble the eggs. Take it out of the pan. 
  4. In this pan, add 2 tablespoons of refined oil. Let it heat up.
  5. To this add 1 tablespoon finely chopped garlic and lightly fry it up. 
  6. Then, add the marinated chicken and fry for 2 minutes.
  7. Next, add 2-3 tablespoons of sliced onions, carrots and green capsicum. Fry for 2-3 minutes. 
  8. Add 4 tablespoons of finely chopped cabbage and fry for another minute.
  9. To this add 1 tablespoon of soya sauce, chili sauce and vinegar. Fry for a minute.
  10. Add salt, sugar and black pepper according to taste. 
  11. Then add boiled instant noodles and the scrambled eggs. Mix everything together and fry for a minute. Sprinkle some chopped spring onions and serve immediately.


NOTE: 
  1. This recipe is a variation to the everyday instant noodles which have become so boring.
  2. Don't boil the noodles too much. 
  3. Add vegetables according to your choice. 
  4. If you want you can omit eggs and chicken and make a vegan version of this. 
  5. Add seasonal fresh veggies. 
  6. Don't forget to serve it hot immediately. 
  7. Its an ideal recipe for breakfast, brunch, light snack, supper and tiffin for kids.
