Omelet Recipe, Crispy Omelette - a Thai Recipe

CRISPY OMELETTE

Cooking Time: 10-15 minutes                                                                    Serves: 2 




INGREDIENTS: 
  1. Eggs 
  2. Cornflour
  3. Sliced onion
  4. Chopped Coriander (dhania) 
  5. Salt
  6. Black pepper powder
  7. Red chili flakes 
  8. Refined oil 

METHOD: 
  1. In a mixing bowl beat 2 eggs. To this add 4 tablespoons of cornflour. Then add 2 tablespoons of sliced onion, 1 tablespoon of chopped coriander leaves. Add salt according to taste, black pepper powder and red chili flakes. Mix everything really well. 
  2. To this add water and mix thoroughly until the batter is quite runny in consistency. 
  3. Add oil in a frying pan. Add about 8-10 tablespoons of oil. Let it heat up.
  4. Stir the omelette mix and add in the hot oil. 
  5. Cook on medium flame until golden brown on each side. 
  6. Serve it immediately with some sweet chili sauce. 


NOTE:
  1. In order to make the omelette crispy there are certain things we have to keep in mind. Don't add a lot of cornflour else it will become like a pancake. Add 2 tablespoon of cornflour for 1 egg. 
  2. Add water carefully. The batter should not be too thick. It should be little runny in consistency.
  3. Add quite some oil in the pan for frying. The more the oil, the more crispy it will become. The Thai way of cooking is deep frying. Feel free to do that if you are comfortable. 
  4. You can add chicken cubes, small prawns or even mussels in this egg mix.
