LEMON CORIANDER CHICKEN

Cooking Time: 30 minutes                                                                       Serves: 8-10




INGREDIENTS:
  1. Boneless Chicken Cubes
  2. Eggs
  3. Sliced Onion
  4. Sliced Green Bell peppers (Capsicum)
  5. Sliced Red Bell peppers
  6. Sliced Yellow Bell peppers
  7. Chopped Coriander (stems or stalks) 
  8. Crushed Garlic
  9. Chopped Green Chilies
  10. Cornflour
  11. Lemon Juice
  12. Salt
  13. Black Pepper powder
  14. Sugar
  15. Tomato Ketchup
  16. Vinegar
  17. Soya Sauce
  18. Refined oil 


METHOD:
  1. In a mixing bowl take the boneless Chicken pieces. To this break 2 eggs. Add salt, sugar according to taste. Then add black pepper powder and soya sauce. Mix everything really well. Add cornflour to this to form a coating on the chicken. Marinate this for 15-20 minutes. 
  2. In a frying pan add oil for deep frying the chicken pieces. Let it heat up.
  3. When the oil is hot, add the chicken pieces one by one and fry them until golden brown on both the sides. 
  4. Strain the pieces and keep aside.
  5. In another pan, take 2 tablespoon of oil and let it heat up. 
  6. To the hot oil, add crushed garlic and fry for a minute. Then add sliced onions and fry again for a minute. Next add green, red and yellow bell peppers. 
  7. Add the chopped green chilies. 
  8. Then add 2 tablespoons of vinegar and tomato ketchup and fry.
  9. Add salt and black pepper powder according to taste. 
  10. To this add the fried chicken pieces. Mix everything together and fry for a minute.
  11. Add water just enough to make gravy.
  12. Let it come to boil.
  13. In a bowl add two tablespoon of cornflour and 4 tablespoon of water. Mix together. Add this slurry in the gravy and cook for a minute.
  14. Then add the chopped coriander stems and lemon juice. Add sugar to balance the acidity of lemon juice. Mix and switch off the gas immediately.  
  15. Serve it hot with fried rice or roti. 


NOTE:
  1. This is an oriental inspired recipe.The flavor of lemon together with coriander is very refreshing. Remember to balance the acidity of the lemon with sugar to have a tangy yet mild sweet flavor.
  2. Don't forget to switch off the gas immediately after adding lemon juice else it may get bitter. 
  3. Adjust the spice of the dish according to your taste.
  4. This recipe is ideal to have with Chinese fried rice or even Roti/ chapati. 
  5. The fried chicken pieces itself can be had as a snack.
