Popcorn Chicken Recipe, KFC style

POPCORN CHICKEN KFC STYLE

Cooking time: 30 minutes                                                                   Serves: 8-10

INGREDIENTS:
  1. Boneless chicken cut into small cubes
  2. Crushed garlic
  3. Vinegar
  4. Salt
  5. Sugar
  6. Black pepper powder
  7. Red chili flakes
  8. Eggs
  9. Cornflakes
  10. Cornflour
  11. Refined oil
  12. Sweet chili sauce
  13. Mayonnaise

METHOD:
  1. In a mixing bowl add the boneless chicken cubes (20-30 pieces). To this add 2 tablespoon of crushed garlic, 3-4 teaspoon of vinegar, salt according to taste, pinch of sugar (optional), black pepper powder and some red chili flakes. Mix everything and marinate for 15-30 minutes.
  2. Beat 2 eggs in a bowl and whisk with a fork.
  3. In a bowl take two cups of cornflakes and roughly crush with hand. To this add 3 tablespoons of cornflour, pinch of salt, black pepper powder and red chili flakes. Mix together thoroughly.
  4. Dip the marinated chicken in the beaten eggs and roll in the cornflakes mixture very well until a coating forms on the chicken.
  5. Repeat the process for all the chicken pieces.
  6. Fry the popcorn chicken in refined oil until golden brown on both the sides.
  7. For making the dip, mix 2 tablespoon of mayonnaise with 1 tablespoon of ketchup or sweet chili sauce.
  8. Serve the popcorn chicken hot with this mayo-ketchup dip.

NOTE:
  1. While marinating the chicken you can use garlic powder. I used crushed garlic as it is available everywhere.
  2. Cornflakes are a must for making popcorn chicken. They add a nice crunch to this chicken. However don't crush it too finely. Use your hand to roughly crush the cornflakes.
  3. It is very important to coat the chicken pieces properly with the cornflakes mixture.
  4. Buttermilk can be used in place of eggs.
  5. Serve hot with mayonnaise and ketchup.
