MANGO FROOTI / MANGO SQUASH
(Pulpy Mango juice-Summer Cooler)
Cooking time: 30 minutes Serves: 15-20
INGREDIENTS:
- Chopped Ripe Mangoes (3 large mangoes)
- Chopped Green Mangoes (2 medium sized mangoes)
- Sugar (250 grams)
- Water
METHOD:
- In a pan add chopped ripe mangoes and chopped green raw mangoes (2:1 ratio).
- Add water until all the mango pieces are immersed.
- Cook for 15-20 minutes till the mangoes are properly cooked boiled and are soft to touch.
- To this add 250-300 grams of sugar and cook again for 5-7 minutes until the sugar dissolves.Switch off the gas and let the mango mixture cool down.
- Blend the mango mix properly until smooth.
- Strain the blended mango puree using some water.
- Use this concentrated mango puree to make Mango Frooti or Mango Squash.
- Dissolve appropriate amount of this concentrated mango puree in cold water and mix properly. Check for the desired sugar content. Serve chilled on a sunny summer day!! Bon Appetite!!
NOTE:
- Only ripe mangoes can be used to make this. But raw green mangoes add a nice sour twist to the drink.
- Take ripe mangoes and raw mangoes in the ratio of 2:1 i.e, use double quantity of ripe mangoes for the best outcome.
- It is important to cook the mango pieces properly before adding sugar.
- Don't skip the straining process. It will lead to a much smooth juice without any fibre.
- The colour of the frooti depends on the colour of the mango pulp used.
- The mango concentrate will be high in sugar content. Use this concentrated puree to make frooti by dissolving in chilled water. Check for the sugar content. If you think sugar is less add more of the mango concentrate and if sugar content is more dilute with more water.
- Serve this drink chilled.
