Stuffed Tortillas Recipe

Stuffed Tortilla or Cheese & Vegetable Stuffed Roti or Pizza Paratha
Cooking time: 5 minutes                                                                              Serves: 1 




INGREDIENTS:
  1. Leftover Roti/Chapati/Tortilla (2) (Roti- Indian Flat Bread very much similar to tortilla)
  2. Egg (1)
  3. Chopped onion
  4. Chopped capsicum
  5. Chopped tomatoes
  6. Sweet Corn
  7. Grated cheese (Processed/mozzarella/Gruyere)
  8. Salt
  9. Black Pepper
  10. Red chilli flakes
  11. Oil 
  12. Sweet chili sauce/Ketchup


METHOD:
  1. In a bowl beat an egg. Season it with salt and black pepper powder and thoroughly mix it.
  2. On a frying pan add 1 tablespoon of oil and let it heat up.
  3. When the oil is medium hot add one Roti or chapati to it and fry on both sides.
  4. On top of the roti add half of the beaten egg making sure the egg mix don't spill on the sides.
  5. Now add a teaspoon of each of chopped onion, capsicum, tomatoes and sweet corn on the egg mix. Sprinkle some chili flakes. On top of it add the grated cheese and the remaining egg mix.
  6. Take the other Roti and gently place on this and press it so that it sticks to the cheese and egg.
  7. Cook on both sides on medium heat until cheese melts and the egg is properly cooked inside the 2 Rotis.
  8. Garnish with some coriander, sprinkle some chili flakes and serve with ketchup or sweet chili sauce.


NOTE:
  1. Its an awesome breakfast recipe that you can make in 5 minute using leftover Roti/Chapati/Tortilla.
  2. Add the veggies according to your preference. Just make sure they are chopped finely.
  3. If you want you can add shredded chicken too.
  4. The process might sound little tricky but trust me its very easy. Go through the video pinned at the top of the page and you will understand my point.
