Chicken and Mayonnaise Sandwich

CHICKEN MAYO SANDWICH

Cooking time : 10 minutes                                                                                 Serves: 6



INGREDIENTS:
  1. Sliced bread
  2. Boiled shredded chicken (300 grams) 
  3. Mayonnaise (1 cup)
  4. Chopped coriander
  5. Salt
  6. Black pepper
  7. Chili Flakes
METHOD:
  1. Boil the chicken pieces with some salt. Using a fork shred the chicken into long strips and remove the bones.
  2. In a mixing bowl take this boiled and shredded chicken. To this add chopped coriander (or parsley), salt according to taste, 2 teaspoon of black pepper powder, pinch of red chili flakes. Mix all the ingredients. 
  3. To this add 1 cup of mayonnaise (add as per requirement) and mix everything gently. 
  4. Add this chicken mayo mixture on top of a bread and sandwich it with another bread slice. Secure the sandwich with a toothpick. Cut into triangles and serve. 


NOTE:
  1. Its best to use homemade mayonnaise. Mayonnaise can be made easily at home using a microwave. Check out my previous blog for more.
  2. In the chicken mix you can add chopped onion, bell peppers, tomatoes, lettuce. But I like to keep it simple. Feel free to add in your desired veggies. 
  3. While adding salt keep in mind that mayonnaise contains salt and boiled chicken also has salt. So add accordingly.
  4. You can make a double or even triple decker sandwich. Don't forget to secure with a toothpick.
  5. This sandwich is ideal for a light snack or for your breakfast. You can also wrap these in aluminium foil and take to your workplace. It stays fresh for quite some time.
