Sweet Potato Pantua-Bengali Dessert

Ingredients:
  1. Sweet Potato (400-500g)
  2. Sugar (1cup)
  3. Cardamom powder (1/4th tsp)
  4. Crushed whole cardamom (2)
  5. Salt (1/4th tsp)
  6. Refined Flour (2-3 tbsp as required)
  7. Mimosa sugar balls/Nokul dana/Ram dana (optional – 1 for each)
  8. Refined oil for deep frying
  9. Water as required 


METHOD:


For making the Pantua/Gulab Jamun:
  1. Cut the sweet potatoes into big chunks and boil the pieces.
  2. Put the boiled sweet potatoes in a strainer and let it dry for an hour.
  3. After drying, peel the sweet potatoes and mash into a smooth puree. There should not be any lumps. Don’t add any water to mash the pieces.
  4. To the mashed sweet potato add 1/4th tsp of salt and 1/4th tsp of cardamom powder. To this add 1 tbsp of refined flour at a time until a dough is formed which can be rolled into balls. (Note: Don’t add too much flour else the gulab jamun will become hard. 2-3tbsp of flour should be enough to form a dough. You can refer to the video pinned at the top of the page for any doubt.)
  5. Divide the dough into medium size balls and place a Mimosa sugar balls/Nokul dana in the center. Grease your palm with some oil/ghee and roll the dough until it is very smooth. There should not be any cracks in the balls.
  6. Deep fry the balls on medium-low flame until golden brown on all the sides. 

For making sugar syrup:
  1.  Add 1 cup of sugar and 1.5 cups of water in a pan and let it come to boil.
  2. To this add 2 crushed whole cardamom.
  3. Boil the sugar syrup for 6-7 mins on medium flame.
  4. The syrup should not be thick but little runny.

Assembling:
  1. Place the hot fried pantua/gulab jamun in the hot syrup.
  2. Let it soak the syrup for 20-30 mins or until they have properly soaked in the syrup and have turned soft. (Time may vary depending on the consistency of the syrup and the gulab jamun)
  3. Serve it hot/cold and enjoy!
