Rasmalai or Rossomalai

Cooking Time:30mins                                     Serves:6-8





INGREDIENTS:
  1. Milk (700 ml)
  2. Sugar (1/2 cup)
  3. Salt (1/4th tsp)
  4. Crushed cardamom (2)
  5. Semolina/suji (1/2 cup)
  6. Eggs (2)
  7. Vanilla essence (1 tsp)
  8. Refined oil (for deep frying)



METHOD:
  1. Take 700 ml milk in a heavy bottom and let it come to boil.
  2. To the milk add 1/2 cup of sugar, 1/4th tsp of salt and 2 crushed cardamom. Cook till sugar dissolves and the milk again comes to boil. Switch off the flame. Keep in mind we don't need to reduce the milk a lot. We want a thin liquid consistency.
  3. In order to make the rasmalai, in a bowl break 2 eggs and beat with a fork or whisk until fluffy (takes about 4-5 mins).
  4. To the beaten eggs add 1 tsp of vanilla essence and mix. 
  5. Finally add 1-2 tbsp of semolina at a time and beat the mix until fluffy. The mix should not be thick, but little runny. Allow this mix to rest for 10-15 mins so that the semolina can absorb the liquid and swell up. 
  6. To slightly warm oil, pour 1 tbsp of the batter and fry till pale yellow in color. Make sure flame is at the lowest.
  7. Add the fried semolina balls in the prepared hot milk and let it soak for at least 2-3 hours (or overnight). As a result rasmalai will absorb the liquid milk and become soft and spongy. 
  8. Serve hot/cold after a meal. Enjoy!
